Sardine Pâté

Serves: 8
Quick and easy no cook pâté, can be made well ahead and serve at room temperature with toast and fresh tomato slices.

Ingredients

  • 2 x 125 g cans sardines in oil, drained, bones removed
  • 125 g (4 oz) butter, softened
  • 125 g (4 oz) low-fat soft cheese
  • 3 tbsp lemon juice
  • black pepper
  • lemon twists and parsley sprigs, to garnish

Instructions

    Purée the sardines, butter, cheese, and lemon juice in a food processor until almost smooth. Add pepper and more lemon juice to taste.

    Divide the sardine mixture among eight small ramekins (or put into one large bowl) and level the surface. Cover and chill in the refrigerator for at least 30 minutes.

    Serve chilled, garnished with lemon twists and parsley sprigs.

    Substitute 250 g (8 oz) cooked peeled prawns for the sardines.
