  • 6 long slices dry-cured streaky bacon
  • 18 cocktail sausages

Sausages wrapped in bacon

INTRODUCTION

Cocktail sausages from the supermarket rather than from the butcher tend to come in packs of 18. Double the recipe if you want more – they’re always a hit with children! Try to buy a good-quality smoked or unsmoked streaky bacon rather than one which is thin and full of water – it makes all the difference.

INSTRUCTIONS

SERVES 8

Preheat the oven to 220C/fan 200C/gas 7.

  1. Stretch each bacon rasher with the back of a knife and cut each rasher into three.

  2. Wrap a piece of bacon tightly round each sausage and put on to a baking tray ready for cooking.

  3. Cook in the preheated oven for about 30 minutes or until cooked and crisp. Serve hot with the roast turkey.

PREPARING AHEAD - Prepare up to the end of stage 2. Cover and keep in the fridge. You could also freeze the wrapped sausages at the end of stage 2. Thaw overnight at cool room temperature and cook as directed.

IN THE AGA - Arrange the sausages on a grill rack in the roasting tin. Slide on to the top set of runners in the roasting oven and cook for about 20 minutes, turning halfway through.
